Italian Sweet Sausages with Green Peppers, Onions and Pasta

Looking for a comfort dish that is big on flavor and easy to prepare? Sausages, peppers and pasta (or hard roll), YUM!


  • 4 TBLS. extra virgin olive oil (EVOO)

  • Medium green pepper, rough chopped (approx 1” pieces)

  • Medium red or yellow onion, rough chopped (approx 1” pieces)

  • ½ tsp. Rosetta’s Farms – Chipotle Cayenne blend *

  • 6 Italian sweet sausages

  • 24 oz. tomato pasta sauce

  • 3 cups of preferred dry pasta (penne, rotini, ziti, etc.)

  • 1 tsp. sea salt

  • Warm large skillet over medium heat with 2 TBLS. of EVOO

  • Cook green peppers, onions and Chipotle Cayenne blend until soft, approx. 5 minutes

  • Use fork to pierce sausages on both sides spaced approx. 1 inch apart. Place sausages on covered plate in microwave on high between 8 to 10 minutes. Once complete, slice sausages into bite size rounds

  • Add sliced sausages and pasta sauce to spiced cooked veggies. Cover skillet and cook over low heat for 20 minutes

  • Place water into large sauce pot (based on pasta selection), sea salt, 1 TBL. EVOO and bring to a boil

  • Add pasta and cook until al dente. Thoroughly drain pasta and return to large sauce pot. Toss with 1 TBL of EVOO

  • To serve, place pasta in an individual bowl and cover with sausage, pepper and onion sauce
