Limey Ghost Potato Chips

1 C. lime juice
2 tsp, salt
1 T RFS Ghost Pepper
2 1/2 lbs potatoes thinly sliced
Stir first three ingredients and place into 1 gallon re-sealable plastic bag
Place potatoes into brine, seal and mix thoroughly. Refrigerate overnight and rotate potatoes in brine
Fill heavy saucepan or deep fryer to mid point with peanut oil and bring temperature to 350 degrees.
Drain excess brine from potatoes and fry in batches for 2 to 3 minutes until golden brown.
Drain on paper towels, let them cool and enjoy
Serves 6 to 8
