RFS Turkey Bacon Club Sandwich
Got extra turkey from the family gathering and looking for a change of taste? Let’s go Dagwood on that turkey with a delightful recipe to bump up those leftovers into Bumstead territory.
Ingredients:
Turkey Salad:
2 cups chopped turkey
1 celery stalk, diced
1 tsp. lemon juice
1 tsp. lemon zest
1 ½ tsp. RFS Chipotle Cayenne spice blend
½ tsp. salt
½ tsp. poultry seasoning
½ cup mayo
Sugar Spiced Bacon:
6 slices of bacon
¼ cup brown sugar
2 tsp. RFS Sweetie Pie spice blend
¼ tsp RFS Chipotle Cayenne spice blend
Sandwich Building Materials:
3 slices of toasted bread
3 tomato slices
3 lettuce leaves
Mayo for toast (optional)
2 to 4 long toothpicks

Baking sheet and parchment paper
Steps:
In a mixing bowl combine the turkey salad ingredients. Refrigerate at least 3 hours (overnight is best) for flavors to meld together
Position rack at top level in oven. Pre heat oven to 350 degrees and line a baking sheet with parchment paper
In a small bowl combine the dry sugar spice ingredients and mix together
In another bowl, coat bacon strips individually on both sides with sugar spice and lay strips onto parchment paper. Sprinkle remaining sugar spice onto parchment layered with bacon strips
Cook bacon until brown and done to your liking, between 15 to 20 minutes. Remove bacon from tray and drain on paper towels
Toast three pieces of bread and have the remainder of your Sandwich Building Materials available.
Apply above items in the following manner:
1st slice of toast with mayo. Top with ½ cup turkey salad, 3 bacon strips and 1 ½ lettuce leaves
2nd slice of toast topped with 1 lettuce leaf, 3 tomato slices, 3 bacon strips and 1 cup turkey salad
Layer the last piece of toast with mayo and crown the top of this gorgeous RFS Turkey Club. Anchor down with toothpicks and cut into two or four sections with serrated knife
Serves 1 to 2, however double up the bacon and building materials for the second sandwich
