Smoked Chili Blend Rub | Pork & Steak

Cook Time Steak: 145F (3-minute rest)

Passive Time Pork: 24 hours

Passive Time Steak: 1-2 hours

Servings: 1 c. ample for 3 large racks of ribs

Storage: Tightly sealed container


  • 2 T. paprika

  • 1 T. cumin

  • 2 T. light or dark brown sugar

  • 1 T. dried mustard

  • 1 T. black pepper

  • ¼ c. salt

  • 1 t. dried oregano

  • 1 t. ground sage

Option 1: Medium heat rub

Option 2: Hot heat rub


In a medium-sized bowl, mix the seasonings separately then lightly fold in the Rosetta's Farm chili spice blends.

Pork: Generously coat the ribs with 4 - 5 T. of rub (small ribs 2 - 3 T.) then wrap them in foil and refrigerate for 24 hours. Remove the ribs from refrigerator one hour before grilling.

Beef: Coat the steaks with 1 T. of rub and refrigerate 1-2 hours before grilling.
