Spice and Brine at the Same Time
This is a nice way to flavor your turkey without much fuss. Note, this will provide nice flavor for the turkey without over-spicing the bird.
1 -14 ½ oz. can of chicken broth
2 1/2 T. RFS Chipotle Cayenne spice blends
3 t. salt
14 to 16 lb. turkey. Defrosted and cleaned
Food injector syringe
Reduce the chicken broth over medium to low heat for 20 minutes. This should yield approx. 1 cup of reduced broth. Stir RFS Chipotle Cayenne and salt into warm broth, then set aside until room temperature.
Pour spice & brine mix into a narrow container (i.e. wine glass) to easily draw mix into syringe.
Fill ¼ of the syringe and slowly inject and extract syringe into front left (or right) of breast. Repeat procedure into the back left of breast. Continue injections into the legs, thighs, and wings. As the mix gets thick with spice near the end, add a little warm water (approx. 1/8 cup) to finish the injection process. Refrigerate turkey overnight
The turkey can be stuffed and cooked at 350 degrees using the measure of 15 minutes per pound for cooking time.
