Sweetie Pie Rice Pudding

Servings: 6 - 8

  • 1/3 C raisins

  • 1/3 C warm water or rum (optional) to plump raisins

  • 1 C uncooked white rice not instant rice

  • 2 C water

  • 3 eggs beaten

  • 2 C evaporated milk

  • ¾ C white sugar

  • ½ t salt

  • 1½ t RFS Sweetie Pie Blend

  • 1 t vanilla extract

  • 1 pkg. instant vanilla pudding 3.9 oz

INSTRUCTIONS

  1. Cover raisins with water and set aside to plump.

  2. Bring 2 Cs of water to boil in a covered pot and add rice. Reduce heat to simmer and cook for 20 minutes.

  3. Pre-heat the oven to 325 degrees

  4. With the exception of ½ teaspoon RFS Sweetie Pie Blend, place the eggs, milk, sugar, salt and vanilla extract into a large bowl and mix together.

  5. Add warm rice and drained raisins into the previous mixture and fold together

  6. Place combined ingredients into a baking dish (10x6x2) coated with cooking spray and bake uncovered for 30 minutes

  7. Stir instant pudding into rice mixture and sprinkle the remaining ½ teaspoon RFS Sweetie Pie Blend on top.

  8. Return to oven and bake for 30 additional minutes

  9. Serves 6 to 8
